Preparation of glucose from cane sugar:Cane sugar (sucrose) is boiled with dilute hydrochloric acid or sulphuric acid. Cane sugar is hydrolyside into equimolar mixture of glucose and fructose. $\underset{\text { cane sugar }}{ C _{12} H _{22} O _{11}}+ H _2 O \xrightarrow[\Delta]{\text { dil HCL or } H _2 SO _4} \underset{\text { glucose }}{ C _6 H _{12} O _6}+\underset{\text { fructose }}{ C _6 H _{12} O _6}$ The mixture is cooled and alcohol is added during cooling. Glucose crystallises out and fructose remains in solution. Glucose crystals are separated by filtration.
