There are two meaning of the word नीलकण्ठः Shiva having purple colour throat and peacock. It is said that during Samudra Manthan, there was a war between the demons and gods to get nectar. The snake called Vasuki was used as churn rope and the mountain named Meru was used as churn dash in the process of Samudra Manthan. During this process, $14$ valueable gems were found which the gods distributed with one another. In the end, only poison was left. Lord Shiva bore it on his throat. Due to the effect of poison, his throat turned purple. So from then onwards, he started to be known as नीलकण्ठः Another meaning of नीलकण्ठः is peacock, because peacock also has purple throat.
